Maple Apple Overnight Oats with Steel Cut oats

Fall is here!
Just imagine the crunch of a Honey Crisp apple and its sweet flavor as you pick it off of the tree and take a bite. Now think of the sweetness of maple syrup blended into your favorite oatmeal. These are the flavors of New England and a perfect combination for breakfast as the leaves are turning from green to brilliant red and gold. The flavors of fall wrap around you like a cozy sweater.

Fall brings sweater weather and busy days, racing your kids off to school just as the sun breaks through the dense fog, juggling schedules to make it to soccer practice and beginning of the year school meetings, and long mileage during the build up for fall marathons. The routine of fall feels good but the days pass rapidly and sometimes getting a good breakfast into your own belly as you madly get the kids ready for the day seems like an impossible task. Overnight Oats are the perfect solution for those mornings when you need a breakfast on the go. Did you know you can make overnight oats with steel cut oats too?

Quick and easy fall breakfast
I have always loved steel cut oats. Bob’s Red Mill Quick cook steel cut oats are whole cut oat groats and are high in protein which athletes need to keep their bodies strong and to help with building and rebuilding muscle. As a long distance runner I always try to make sure that I get the right amount of protein in my diet. Bob’s Red Mill Steel Cut oats are made from whole grains, kosher, and vegan. These steel cut oats are perfect for using in overnight oats, the texture will be a little different than traditional overnight oats but it is much heartier. Adding in Honey Crisp apples, maple syrup and cinnamon will make you immediately think fall and apple crisp! In addition to all of the goodness I’ve already mentioned this recipe would not have been complete without Stonyfield Organic Grassfed Yogurt.
Maple Apple Overnight Oats Recipe

Overnight oats
ingredients:
- 1/2 Cup Bob’s Red Mill Overnight Steel Cut Oats
- 1/2 Cup Stonyfield Organic Grassfed Yogurt Vanilla
- 1/4 Cup Stonyfield Organic Lowfat Milk
- Honey Crisp Apples Cubed
- 1 Tablespoon Maple Syrup
- 1/2 Teaspoon Cinnamon
- 1 Tablespoon Bob’s Red Mill Coconut Sugar
Directions:
Blend all ingredients in a jar, cover and refrigerate over night. Stir and enjoy!

Yummm these look so tasty! I love any type of oatmeal – overnight or hot! I almost always have an apple and carrots with my oatmeal, especially in fall.
