September 5-KITCHEN #Runnerdphotoaday Challenge from @ihaverun
I think the word of the day today for the #runnerdphotoaday challenge is one of my favorite words. The word of the day is KITCHEN (a close second would be GARDEN for all of the yummy garden fresh vegetables) because everyone in my family loves to eat. Whenever we are together at a family meal somehow the conversation always turns to food at some point. I love watching chef shows, the Food Network, The Cooking Channel, and am also dreaming about what meal and what foods and flavors I might like to eat.
This summer cooking has been all about the garden. This is the first year that I have had my own garden. I have raised beds and we have been enjoying a bounty of vegetables all summer long. Piper and Brock love coming out to the garden to help water and to pick vegetables which they can munch on right after they are picked. I love that one of my daughter Piper’s favorite things in the garden to eat is Basil. Perhaps she too has the foodie gene?!?! I love teaching my kids all about food and new flavors.
I have had incredible luck with my tomatoes this year and even though I have had to battle the dreaded tomato horn worms we have had tons of fresh tomatoes to enjoy. My favorite are the Lemon Boy tomatoes which have a clean light flavor and the Sun Gold cherry tomatoes that you end up popping into your mouth like candy.
I was contemplating my post for the #runnerphotoaday Challenge when suddenly I noticed the Northern Gourmet truck driving into my driveway. I LOVE it when the Northern Gourmet shows up and I can stock my fridge with seafood. Today I purchased Wild Salmon and Shrimp. Seeing the beautiful salmon filets and the giant pile of tomatoes from my garden on the counter I decided to make a tomato salsa to go with a grilled salmon brushed with olive oil and seasoned with salt and pepper.
For inspiration I headed to Pinterest to get some ideas because the eyes are the window to the stomach and found a recipe for Salmon with cherry tomato salsa on “Paleo Diet LifeStyle” which I modified slightly. The results were a fantastic summer fresh meal with bright flavors. I especially enjoyed the lemon in the recipe because the acid helped to provide balance to the flavors.
I would highly recommend this recipe from Paleo Diet Lifestyle:
Cherry tomato salsa preparation-(My Modified Version: “Lemon Boy Sung Gold Salsa”)
- 1/2 cup cherry tomatoes, quartered (I substituted with Lemon Boy and Sun Gold Cherry tomatoes from my garden)
- 2 cloves garlic, minced;
- 1 tsp lemon zest;
- 1 tsp fresh lemon juice;
- 2 tbsp olive oil;
- 1/4 tsp sea salt;
- Freshly cracked black pepper to taste;
- 1/4 cup fresh oregano, chopped; (sadly I did not have any fresh oregano)
- ****I added Fresh Basil to the Salsa which help heighten the flavors and added summer freshness)
The best part about the salsa was that my kids helped me pick the tomatoes and basil and they helped me make the salsa. We had a great time cooking together in the kitchen.
