Hooray! It’s Fresh Friday! Have you ever tried Avocado Egg Salad?
Yesterday I had an egg-streme craving for egg salad. I carefully hard-boiled my beautiful Pete and Gerry’s Organic Eggs and opened the refrigerator reaching in expecting to pull out the jar of mayonnaise. All I found was a sad empty spot. My hopes of an amazing egg salad sandwich were dashed!
But then, I had an epiphany! Why not use avocado in place of mayonnaise! BRILLIANT! A perfectly ripe avocado offers the same smooth texture as mayonnaise with a much fuller flavor. Did you know that avocados can help your body absorb certain nutrients better? Avocados are also high in oleic acid which helps to prevent breast cancer a benefit similar to that of olive oil (For more nutrition facts about avocados check out this link). I must admit that I actually have a slight avocado addiction. If I have ripe avocados on hand I will slice them open drizzle in a little olive oil in and scoop out the creamy deliciousness with a spoon. Sadly, my dad is allergic to avocados (and bananas too–who knew these two foods were related?). Hopefully this will be one allergy that I do not inherit! My children are huge fans of avocados or “cado” as they like to call it. I guess they inherited my avocado loving gene!
Now, back to the point . . . thankfully my plans for an amazing Avocado egg salad sandwich were granted! We had just been to our wonderful local Littleton Food Co op or the “COOP” as many of my friends call it. My daughter had lovingly counted out 4 avocados and placed them gently in the bag . . . 1, 2, 3, 4! I chose the most perfectly ripe avocado, sliced it open and mashed it! The next thing I added was 2 beautiful hard boiled Pete and Gerry’s Organic Eggs with the most golden yolks. I squeezed in some fresh lemon juice and added a little salt and pepper. To finish off my avocado egg salad sandwich masterpiece I used organic whole wheat bread and some beautiful salad greens.
The result was PERFECTION! This sandwich has taken the original plain egg salad to a whole new level with light lemon flavors and rich creamy avocado goodness.
Recipe for Avocado Egg Salad:
- 1 Whole Ripe Avocado
- 2 Pete and Gerry’s Organic Egg Hard-Boiled
- 1 slice of lemon-squeezed
- Salt and pepper
- Salad Greens
- Your favorite bread
Directions: Cut avocado into halves and remove the pit and skin. Mash or dice avocado. Boil and peel eggs. Dice the organic eggs. In a bowl mix mashed or diced avocado with diced egg. Add a squeeze of lemon juice and salt and pepper to taste. Choose your favorite bread to make a sandwich adding salad greens, eat with crackers or plain. Enjoy!
