Stonyfield Yogurt Dressing and Fresh Greens from Taylor Farms

If you are like me you are eager for summer not only for the warmth but also because it means that there are fresh vegetables galore. Whether picking fresh veggies from your garden or finding the best organic veggies and greens at your local grocery store salads are especially easy to add into any meal in the summer. The key to a great salad is often the dressing.
Yogurt can be a great base for a salad dressing. I like to use Stonyfield Organic Smooth and Creamy Plain Whole Milk Yogurt. It is a great option that can give you the creaminess that you are looking for without being heavy. I love to blend in fresh herbs like parsley and garlic from our raised beds. Adding lemon juice and lemon zest to your dressing brightens it up.
We eat a lot of baby spinach in our house. My kids even love it too! Recipe: Lemony Garlic Yogurt Dressing
- 1 Cup Stonyfield Organic Smooth and Creamy Plain Whole Milk Yogurt
- 1/2 Tablespoon minced fresh garlic
- 1/2 Tablespoon chopped fresh parsley
- 1/3 Cup Olive Oil
- 1 Tablespoon White Wine Vinegar
- 1 Tablespoon Fresh Squeezed Lemon Juice
- 1/4 Teaspoon Sea salt
- Freshly Ground Pepper to Taste
- Fresh Lemon Zest
- Taylor Farms Organic Spinach and Carrots with Fresh Beets
Whisk all ingredients together and serve over summer greens. Toss in some edamame for extra protein. This dressing also goes well blended with tuna fish over a summer salad.
