Arctic Temps Outside=time to head for the comfort food recipes

This weeks menu had the perfect recipe to help you find warmth now that the arctic temperatures have blanketed NH. If you can believe it, the other night it was Negative 27 degrees at my house. Yikes! When it is that cold outside all I want to eat is comfort food. The recipe from Simple Healthy Meal Plans is: “Garbanzo Beans and Smoked Sausage Stew.”
Garbanzo, Greens and Smoked Sausage Stew: Recipe From Simple Healthy Meal Plans
1 large onion, chopped
1 can Eden Brand garbanzo beans or 2 cups soaked and precooked garbanzo beans
(if from dry)
1 bunch Beet Greens, coarsely chopped
2 carrots, washed and coarsely chopped
2 cups pre-cooked Turkey Kielbasa or sausage of choice (see recipe below)
1 tbsp olive oil 1⁄2 tsp sea salt 1⁄4 tsp smoked paprika
1 quart chicken broth or 1 low sodium organic bouillon cube plus water
1. In a large soup pot or Dutch Oven, heat the olive oil over medium
2. Sauté onion, carrots, salt, and paprika for 5 minutes
3. Add in broth, garbanzo beans, Kielbasa or sausage
4. Bring to a simmer.
5. Turn off heat and add 1 bunch beet greens 5 minutes prior to serving
6. If eating later in the week, reserve washed and chopped kale until it is time to
reheat the stew
Optional: Garnish with fresh chopped herbs such as parsley or dill
*I modified this recipe a little bit as I am not a huge fan of Garbanzo Beans so I substituted Organic Cannellini Beans for the Garbanzos. I also added some pepper and some minced garlic. I chose to use Kielbasa from North Country Smokehouse as I was unable to find a sausage that I wanted to use. The stew is currently simmering and smells amazing! I can’t wait to try it tonight!
